Mushrooms & Sunflower Microgreens

A delicious and healthy sauteed mushroom dish with a burst of flavors from sunflower microgreens and minced garlic. Perfect as a side dish or an appetizer.

Ingredients

4 servings

  • 2 8oz packs of whole baby bella mushrooms

  • 2 tablespoons avocado oil

  • 4 ounces (2 containers) of sunflower microgreens

  • 2 cloves garlic, minced

  • Salt to taste

Step 1

Heat avocado oil in a large skillet over medium heat.

Step 2

Add minced garlic and saute until fragrant, about 1 minute.

Step 3

Add baby bella mushrooms to the skillet and cook until they start to brown and release their juices, about 8-10 minutes.

Step 4

Toss in sunflower microgreens and cook for an additional 2 minutes until they wilt slightly.

Step 5

Season with salt to taste and mix well.

Step 6

Remove from heat and serve hot.
